Beyond the Cities: Nature Walks, Culinary Craft, and Local Legends in Japan

Introduction

Step off the well-trodden tourist trail and discover a more intimate, grounded side of Japan. This month’s featured experiences invite you to breathe deeply among ancient trees on a Nordic walking forest tour, taste history at century-old culinary establishments, and explore sustainable outdoor resorts built in harmony with nature.

You’ll sample ramen from globally loved brands, savor charcoal-grilled meats at renowned family-run eateries, and witness the quiet dedication behind traditional soy sauce brewing—still carried out by hand, and honored by top international chefs.

These are not just attractions—they are living parts of Japanese life, crafted and preserved by local hands. Whether you seek stillness in the woods or richness in the bowl, your journey into the heart of Japan starts here.

MENYA MUSASHI: The Origin of Double-Soup Ramen

Founded in 1996, Menya Musashi is the original flagship of the Musashi Group, now with locations overseas as well. Known as a pioneer in the ramen industry, Musashi revolutionized the idea of ramen shops by putting the customer first—emphasizing hospitality, cleanliness, and the joy of eating, alongside great taste.

At the heart of our ramen is the iconic double soup: a bold combination of rich animal-based broth (chicken and pork bones) and fragrant seafood-based broth (bonito flakes and dried sardines). This signature “two-sword style” soup delivers a deeply satisfying, well-balanced flavor.

In an era when ramen shops focused solely on taste, we were among the first to offer excellent service and hygiene as part of the full dining experience. Our mission has always been to bring joy through food—and that’s the spirit you’ll feel in every bowl at Menya Musashi.

Come taste the ramen that helped reshape the industry.

Welcome to NAHO’s Wellness Tours – Nature and Healing in Beppu & Hiji, Oita

We are NAHO, a local team offering wellness tours in Beppu City and Hiji Town, located in the heart of Oita Prefecture, Kyushu. Our tours are designed especially for international travelers who want to experience Japan’s natural beauty and healing traditions through Nordic walking and forest bathing. Each tour is a half-day program that invites you to slow down, breathe deeply, and reconnect with nature.

One of our signature programs takes place in the forests surrounding Mt. Tsurumi, the mountain that gives rise to Beppu’s famous hot springs. You’ll walk a beautiful trail connecting two serene lakes — Lake Shidaka and Lake Kagurame. The highlight of this route is Lake Kagurame, where in early to late June, over 15,000 iris plants bloom across roughly 80 varieties. It’s one of Beppu’s seasonal treasures and a truly breathtaking sight to enjoy while walking mindfully through nature.

Another popular experience focuses on Myoban Onsen, the area with the highest sulfur content in all of Beppu. This tour also includes Nordic walking and forest bathing, and concludes with a sweet treat: Beppu’s locally loved onsen-steamed pudding. It’s a comforting and memorable way to immerse yourself in local flavors and culture.

For those seeking spiritual refreshment, we offer a third tour in Hiji Town, just next to Beppu. Here, you’ll walk around Mt. Kyouzuka, a mountain known for its natural spring believed to have cleansing and detoxifying powers. Drinking the fresh spring water from the base of the mountain while surrounded by quiet forest is a deeply calming experience that many guests find spiritually uplifting.

We hope you’ll join us on one of our Wellness Tours during your visit to Beppu. It’s a chance to refresh your body, clear your mind, and experience the essence of Japanese nature and hospitality. We look forward to welcoming you.

A Japanese Tsukemen Experience That Engages All Five Senses — Where Dashi Meets Spice

With locations in Kanda and Shimbashi, Menya Shugo is a tsukemen specialty restaurant offering a sensory-rich dining experience that fuses the deep umami of traditional Japanese dashi with the aromatic complexity of hand-ground spices.

At the Kanda branch, the culinary process begins each morning as skilled artisans grind fresh spices using a stone mill. These are then blended with carefully prepared dashi made from kombu (kelp), katsuobushi (bonito flakes), shiitake mushrooms, and other traditional ingredients. The result is a one-of-a-kind soup — deeply layered, aromatic, and reminiscent of a refined Japanese spice cuisine.

The Shimbashi branch offers a different expression: a bold, rich tsukemen broth extracted using a pressure pot to draw out the maximum umami from the ingredients, delivering a classic yet elevated tsukemen experience.

Both locations feature premium pork, meticulously prepared in-house each day. The pork has consistently earned top-tier ratings from flavor evaluation institutes, attesting to its quality and care in preparation.

A highlight not to be missed is the “shime” — a closing dish that captures the heart of Japanese culinary tradition. Changing with the seasons, this final course often includes flavored rice or a light dashi broth, transforming the leftover soup into a completely new and satisfying dish that brings your meal full circle.

At Menya Shugo, tsukemen transcends the category of noodles — it becomes a journey through Japanese taste, culture, and craftsmanship.

When people think of takoyaki, they think of Osaka — the birthplace of this beloved Japanese street food. Known and loved around the world, takoyaki has become a must-try dish for international travelers visiting Japan. But did you know you can also enjoy making takoyaki yourself in Tokyo?

Located in Ginza, one of Tokyo’s most iconic neighborhoods, Kaidan no Ue Bar offers a unique hands-on dining experience where you get to make your own takoyaki right at your table. The drink menu includes a wide selection: beer, cocktails, wine, sake, shochu, and soft drinks. For those wanting to pair local flavors, Japanese beer and domestic wine come highly recommended.

In addition to takoyaki, the bar also offers other Japanese favorites. One standout is the lava stone-grilled Japanese Black Wagyu sirloin, which guests can grill themselves BBQ-style using the lava plate installed on each table. Ramen YUKIRI Tour

Founded in 2011 in Kojimachi, Tokyo, Sora no Iro was born out of the desire to make people happy through ramen, aiming to challenge the conventional boundaries of what ramen can be.

Our origin lies in the creation of “vege soba”, where vegetables are the main star of the dish. At a time when people doubted the idea of adding vegetables to ramen, we embraced the challenge and proposed a new style that balanced both deliciousness and health.

At our main store, we make homemade noodles daily, paying careful attention to both aroma and texture. Our commitment to crafting noodles that perfectly harmonize with our broth represents our uncompromising attitude toward quality. We also carefully select ingredients from across Japan, combining the rich flavors of animal-based, seafood-based, and vegetable broths to create a bowl that is gentle on the body.

Our dedication to this craft was recognized when we were featured in the Michelin Guide.

Moreover, our mission is to continue evolving ramen, whether through expanding domestically and internationally or collaborating with other companies. We aim to elevate ramen from just a meal to a bowl that colors life. This commitment to innovation will drive us to keep challenging ourselves in the years to come.

  • Extra-Spicy Curry: Carefully blended with over 15 spices and simmered to perfection, this curry boasts a bold, rich flavor that complements rice beautifully and leaves a lasting impression.

The interior exudes a retro Showa-era charm, enhanced by warm wooden accents, creating a cozy atmosphere ideal for lunch or family dining.

Experience the rich, comforting flavors of Shinjuku yoshoku and enjoy a moment of warmth away from the bustling city.

Cycle Through Hidden Japan: Kinosaki Onsen Guided Bike Tour

Explore the hidden beauty of Kinosaki Onsen and its surrounding countryside on this guided cycling tour led by a local female guide. Pedal past peaceful rice fields, charming old houses, and along the scenic Maruyama River, all the way to the Sea of Japan.

This experience reveals places that aren’t in guidebooks—like the mythical Dragon Palace island from the legend of Urashima Taro—and offers unique local insights into the culture and history of Kinosaki.

You’ll stop at Futakata Kamaboko, a local shop specializing in fish cakes, where you’ll try the unusual yet tasty chikuwa-pan (with tuna flake). The tour also includes a visit to Tsuiyama Fishing Port, famous for its fresh seafood and snow crab.

This tour blends local charm, natural beauty, and cultural storytelling for an unforgettable memory of your time in Kinosaki. Let’s make a special day together!

WITHSPORTS

Not only Tokyo, but here in Minakami Town, Gunma Prefecture, is a treasure trove of nature.
I think a plan to go around the lake by cart would be nice too.

Currently, we are creating a course from Seattle where you can ride an e-bike or bicycle around the lake, take a canoe or rafting trip along the way, and then return.
If you have time, please come visit us here.

SET UP JAPAN

The Iwafune Blast Experience Tour held at Iwafune Mountain, a special effects mecca in Tochigi City, Tochigi Prefecture, is a one-of-a-kind activity where you can experience “real explosions” up close, as if stepping into a movie scene. At the majestic Mount Iwafune, once used as a quarry, you can witness a spectacular demonstration using actual special effects explosions. Experience the realism of the moment—feeling the heat, hearing the sound, and even smelling the smoke. With safety management and detailed explanations provided by professional special effects staff, it’s hugely popular with first-timers and foreign tourists alike. The general experience tour runs once every two months, while private rental plans for groups, corporate training, and filming are available upon request. Utilized for movie shoots, this location offers a precious opportunity to experience Japan’s unique “explosions × special effects” entertainment. It’s emerging as a new hotspot for tourism, training, and regional revitalization.
